French Onion Soup is something I always have to order at a restaurant. I absolutely love it! It might be the molten hot gruyere cheese that burns the taste buds right off of my tongue because I can never wait for it to cool down or just the richness of soup itself. I have made it a Christmas tradition for myself to make my very own French Onion Soup in the crockpot. P.S the longer it is in the crock pot the better it taste. This is a recipe that will be sure to test your patience.
The Prep
Cut up all onions and shallots. Warning, this will make you cry.
Combine the onions with butter, brown sugar, thyme, bay leaves, salt and pepper. Cook on high in the crockpot until things are brown and caramelized. This could take a couple of hours. You want the onions to reduce to half the size.
Once Onions are cooked down, add the beef broth, wine, balsamic vinegar.
Turn to low and let sit for at least 8 hours but I let mine go over night or up to 2 days.
Finally dish into an oven safe bowl, layer with bread and shredded Gruyere and broil on High for 2 minutes. Enjoy!

4 Red Onions
4 Yellow Onions
3 Shallots
1/2 Cup off Unsalted Butter (1stick)
1Tbsp of brown Sugar
Salt & Pepper
Bayleaves & Thyme
2 (32 oz) Beef Broth
2 Cups of Red wine (Cabernet)
2 Tbsp of balsamic Vinegar
Loaf of French bread
Shredded Gruyere cheese
